(1)细嚼慢咽:食物先入口腔,再通过食管进入胃,口腔的功能是多方面的,除说话以外,先辨食物的硬软、滋味、冷热、生熟等,然后用牙齿咀嚼,门齿管切断,犬齿管撕碎,臼齿管研磨和压碎。在咀嚼的同时,口腔内的大小唾液腺体分泌出帮助消化的唾液与食物充分拌匀,以利于胃肠消化吸收。以上这些功能只有在细嚼慢咽时才能完成,譬如说,食物中的鱼刺、骨头碎片、沙子、杂质要吐出去;较粗大的食物需用牙齿嚼碎;太烫的食物或汤水不能咽下;这样就保护了食管和胃的黏膜免受擦伤和烫伤,有利于食物的消化吸收。早在1964年,医务人员在调研的基础上,曾指出饮食的“粗、硬、热、快”等可能与食管癌形成有关,提倡“细嚼慢咽”等,以减轻对食管黏膜的磨损、烫伤。
(2)不吃偏食,不暴饮暴食:有的人只爱吃某几种食物,对另外的许多食物就是不吃;例如有的人爱吃肉类,不爱吃蔬菜;有的人爱吃白菜萝卜,不爱吃葱、蒜、韭菜;有的人只吃肉类,不吃鱼类;有的人不吃鸡蛋,不喝牛奶,不吃粗粮,不吃海产品,不吃豆制品等。要知道我们每天吃过的营养食品按热量计算,有一个合理的分配比例,粮食、蔬菜等碳水化合物应占60%至65%,肉类、奶类、鱼类中的蛋白质占10%至15%。人类所需要的各种维生素和各种矿物质,在不同食品中的含量不同,如果偏食,就不能使各种食物营养互补,影响防病(包括癌症)能力。

唐人的另一种主食是胡麻饼。唐代是一个多民族大融合的时期, 在吃食上也自然受到其他民族的深刻影响。胡麻饼最初是西域少数民族的主食, 自汉代传入中原以来, 一直深受汉族人的喜爱。“胡麻饼样学京都, 面脆油香新出炉, 寄于饥馋杨大使, 尝看得似辅兴无。”这是唐代大诗人白居易在《寄胡麻饼与杨万州》一诗中, 对胡麻饼的赞誉。唐代长安的胡麻饼是很驰名的, 其中以辅兴坊制作的最佳而闻名。安史之乱时, 玄宗西幸, 走到咸阳集贤宫, 没有东西吃, 只好用“胡饼”充饥, 由此可见唐时期胡麻饼的普及程度之高。胡麻饼实际上类似于今天新疆维吾尔族人的主食“馕”, 它是以面粉为主材料烙制而成, 色泽黄亮, 形状多样, 口味咸淡适中, 皮酥肉软, 蛋白质含量高, 制作工艺上分为芝麻饼、油饼、肉饼、素饼等五十多种。诗中提到的胡麻饼是指芝麻饼, 即制作时在饼的表面均匀撒上芝麻, 吃起来既有面团的软糯, 又弥漫着芝麻的香腻。因为胡麻饼制作工艺简单, 通风阴凉处储存即可, 保质期时间较长, 携带方便, 适合充饥, 所以成为商旅人士的不二选择。随着唐代商贸往来活动的逐渐频繁, 胡麻饼也渐渐称为百姓们的主食。
除了上面提到的两种主食外, 百姓为了应对自然灾害, 缓解可能出现的粮食危机, 还会采摘一些野生植物来充饥。如在我国长江中下游地区广泛分布的水生植物——菱角, 又叫做菱, 多生长在池塘、泥沼中, 形状酷似牛角。菱角皮脆肉美, 蒸煮后剥壳即可食用, 内含丰富的蛋白质, 具有止渴生津, 化解酒毒的功用, 药用价值高, 老少皆宜, 采摘方便, 因而受到水乡居民的喜爱。每年的五、六月份, 水乡居民乘船入湖, 进行大量的采摘活动。唐诗中也有此类记载, 白居易《春末夏初闲游江郭二首》中曾这样写道“嫩剥青菱角, 浓煎白茗芽。”可以想象新鲜采摘下来的菱角, 剥开即食, 鲜嫩的果肉入口即化, 多么清爽可口啊。韩愈《陪杜甫侍御游湘西两寺独宿有题一首, 因献杨常侍》云“涧蔬煮蒿芹, 水果剥菱芡”, 可见唐人已将菱角作为日常食物, 常有食用。
在粮食紧缺时期, 或是生活极度贫寒的人家中, 也常会以橡子充饥。橡子是栎树的果实, 形状与蚕茧相似, 故又叫栗茧, 外壳坚硬, 成熟以后表皮呈棕红色, 内核如花生仁, 含有丰富的淀粉, 可食用。不过有一些橡子品种, 如黑橡子, 如果不经过反复蒸煮口感会十分苦涩。即便如此, 橡子对于穷苦人家而言依然是极其珍贵的果腹食物。张籍的《野老歌》一诗歌中曾这样写道:“苗疏税多不得食, 输入官仓化为土。岁暮锄犁傍空室, 呼儿登山收橡实。”可见, 在苛捐杂税重压之下, 百姓苦不堪言, 只能捡拾橡子充饥度日。唐代在烹调橡子的做法上, 除了将其蒸煮后食用外, 还有一种是将其研磨成粉制成橡子饼食用。贯休的《闻无相道人顺世五首》就曾有过这样的描述:“一事不经营, 孤峰长老情。惟餐橡子饼, 爱说道君兄。”橡子饼口感回甜, 橡子本身的苦涩味道会被面团的甜糯掩盖。这种橡子研磨成粉, 和面制饼的做法被保留了下来, 现如今依旧沿用。
隋唐时期, 造酒工艺空前繁盛, 因此唐诗中也有很多篇幅与酒有关。唐代的酒如果按照酿酒原料来分类的话, 可以分为粮食酒和果酒。粮食酒的原料多是糯米、玉米、黄米、谷、稻、黍等, 使用的酿制方法不同, 同样的原料也可以制造出不同风味的酒。一般以酒精浓度的高低分为浓酒和请酒。如果酒液中的沉淀物较多, 且口味偏甜, 则称这种酒为浊酒。诗人白居易偏好饮酌清酒, 他的诗篇里多有提及, 如诗《荔枝楼对酒》云:“荔枝新熟鸡冠色, 烧酒初开琥珀色。”这里的烧酒与现在的茅台酒属于同一类。值得一提的是, 在唐诗中, 通常以圣人、贤人分别代指清酒和浊酒。如在白居易《和微之诗句<三月三十日四十韵>》曾这样形容道:“圣贤清浊醉, 水陆鲜肥沃。”这里的“圣贤”代指“清浊酒”。提到果酒, 就不能不介绍葡萄酒。葡萄酒的酿制工艺自贞观十四年传入中原后, 唐王朝的庆典赏赐都离不开葡萄酒。唐诗中咏诵葡萄酒者要数王翰的《凉州词》最为脍炙人口:“葡萄美酒夜光杯, 欲饮琵琶马上催”, 边塞将士开怀畅饮, 醉卧沙场, 一杯葡萄酒将塞外晕染的情绪释放得淋漓尽致。

So each one hurries to make room for the next person. Before, I seldom ate vegetables. Because I disliked vegetables. I liked sweet snacks. They taste delicious but they are not good for me. They give me energy but they are not healthy. So I must change my diet. Now, I eat a bowl of rice for breakfast, and I often eat an egg.
For lunch, I usually eat a bowl of soup, vegetables and a bowl of rice. I eat meat and vegetables for dinner. If I want to be healthier, I must exercise. So I changed my lifestyle now. Now, I often exercise once a week. I do not eat snacks or fast food any more. So I think I am healthy.
